I've been trying to make meringues for a couple of times now. But why on earth does my meringue kept on softening up after a few minutes taken out of the oven? I've baked my meringue at 60 degree C for 4 hrs and the same thing happened!

Should I have turned the oven off even before the meringue hardens??

I'm thinking of going there on a trip with a friend. But knowing that so many Britons had been infected with swine flu is seriously creeping me out. Its been years since I left the country and would love to check out my old place in Edinburgh.

I made some marshmallows last week but after leaving it for a day, it got stickier and wet even after rolling them in icing and corn flour. I don't know what the problem is. Any ideas?
