Plants essentially take up CO2 from the atmosphere and release oxygen. Some of the CO2 they take is transformed to plant matter, and does not return to the air. This way plants clean up the air and store in their tissues carbon.
As long as the plant lives, or dies and is buried nothing much happens, but if the plant is burned, it will release the carbon and create greenhouse gases and pollution.
