As you probably know mascarpone is an italian cream cheese, and it is quite different from our American version. Here is a substitute that I have tried that works extremely well. I used it once when I could not find the marscarpone. Use 2 cups cream cheese, 1 cup whole ricotta cheese, and 1 cup of sour cream. Mix well, and follow your recipe accordingly

Plain old American cream cheese. If it's in the brick form, let it soften and whip it a bit.
