For a tasty lunch, I get this wrap from a local restaurant that has..
avocado
lettuce
tomato
cucumbers
banana peppers
roasted red peppers
sprouts
havarti cheese
herb mayo
on a spinach flatbread
it's soo good.. and would be easy to make, it's just having those ingredients handy.

A couple other faves of mine are this spinach dip that I put in a bread bowl (prep time usually 30 mins. Recipe found in Extraveganza cookbook--sorry, I don't have the book with me!) and steamed kale with 2 tbsp lemon juice, 2 tbsp flax oil, 2 tbsp soy sauce, and 2 tbsp toasted sesame seeds, which is the easiest to make out of the bunch.

I have a great easy meal for you.You buy one of those Mexican taco kits.Instead of adding beef or chicken add protien crumbles.I use Lightlife brand.The texture and taste is so close to beef it's scary.It takes only minutes to make and even meat eaters will enjoy it.My parents are huge meat eaters and when I made this they thought I made beef ones for them!You can also use these crumbles in a tomato sauce to make a mock meat sauce for pasta.

I love using the steamed veggie bags from Ziplock. I cut up broccoli, mushrooms, carrots, green peppers, red peppers and green beans and put them in the bag. I usually do about five minutes in the microwave, and they come out delicious.
Or I fry mushrooms, onions, red peppers, green peppers and garlic together and put it on top of rice (kind of like a stir fry). Yummy!
