MEXICAN FRUIT CAKE (by Joe DeLamielleure of the Buffalo Bills)
This is one of Joe DeLamielleure’s favorite treats made by his wife Gerri.
2 cups all-purpose flour
2 cups sugar
2 large eggs
2 teaspoons baking soda
1 (16-ounce) can crushed pineapple in juice
1 cup walnuts, coarsely chopped
Cream Cheese Frosting:
1 (8 ounce) package cream cheese, softened
1 stick margarine
1-teaspoon vanilla extract
2 cups powdered sugar
Preheat oven to 350°F.
In large bowl, stir all cake ingredients together by hand. Spread evenly in 9- x 13-inch glass baking dish and bake until toothpick inserted into center comes out clean, about 35 minutes.
While cake is baking, make frosting.
In large bowl, using electric mixer, beat cream cheese, margarine, and vanilla until smooth. Add sugar and continue to beat until well combined.
Pour frosting over the cake immediately upon taking the cake out of the oven. Cool the frosted cake in the refrigerator.
TRES LECHES CAKE (Pastel De Tres Leches)
Cake:
5 eggs – separated
1 c. granulated sugar
1 c. self-rising flour
1 tsp. vanilla
Milk Syrup:
1 (14 oz). can sweetened condensed milk
1 (12 oz.) can evaporated milk
1 c. whole milk
1 tbsp. vanilla
Grease and flour an 8″ x 12″ pan. Preheat the oven to 350 F. Separate the eggs. Beat the egg whites in a large mixing bowl. Add 1 cup of sugar slowly to the egg whites, beating constantly. Add the yolks one by one, beating well after each addition. Stir in the teaspoon vanilla. Sift the flour and stir it into the egg mixture. Pour the batter into the prepared pan. Bake the cake for 20 minutes, or until done. Cool. Blend the sweetened condensed milk, evaporated milk, whole milk, and 1 tablespoon vanilla. Pour this syrup over the cooled cake.
Meringue:
3 egg whites
1 c. granulated sugar
1 teaspoon vanilla
fresh strawberries and mint leaves for-- garnish (optional)
For the meringue, beat the 3 egg whites to soft peaks. Gradually add 1 cup sugar, and beat until stiff peaks form. Stir in 1 teaspoon vanilla. Frost the cake with meringue. Garnish if desired.
Cream Frosting:
1-1/2 c. whipping cream
1 tsp. vanilla
1 c. Granulated sugar
Whip the cream, 1 teaspoon vanilla, and 1 cup of sugar together until thick. Spread over the top of the cake.
FLAN
2 c. half and half cream
4 egg yolks
2-1/2 tbsp. sugar
1 tsp. vanilla
1/3 c. light brown sugar
Heat the half- and- half. In a mix master bowl, beat the egg yolks, gradually adding the sugar and beating it until it forms a ribbon. Slowly dribble the hot cream into the egg mixture while beating. Beat at low speed so as not to add air. Add vanilla.
Pour into a one- quart soufflé dish or 5 individual 3-½ inch soufflé dishes. Place in a pan containing one inch of hot water and bake, uncovered, at 325 F. until set. The one- quart soufflé will take 40 minutes and the individual soufflés will bake in 25 minutes.
When the custard is set, sprinkle with sifted light brown sugar (sift through a strainer). Cover the custard all the way to the sides. Place under a broiler or 450 F. for a minute until the sugar melts. DO NOT BURN the sugar. Chill and serve cold. Makes 5-6 servings.

Alot of the mexican restaurants here serve churros. My daughter had to make them for her Spanish class. They are time consuming but are really good.
