The best product for iron on fabric applique patches is:
Steam-a-Seam II Lite (or any of the other Steam-a-Seam products) by the Warm and Natural Company is the best on the market.

It permanently bonds fabric all the way to the edges so you do not have to sew the edges down, but if you do, it doesn't gum up your needles and is easy to sew with. It is washable, dryable and even dry cleanable. Check the website for further information. It has project ideas that would help you figure out how to design your own appliques and to bond them together.
It works better than Wonder Under.

You are looking for a product called Wonder Under. It can be found at the fabric store with the interfacing by the yard.
It comes in lite weight and heavy weight. There will be instructions with it. Very easy to use.

WonderUnder is only one of many iron on stuffs available. There are lots of manufacturers of this wonderful stuff. All of them have instructions on each yard of the stuff. Follow them carefully.
Also Allene's makes an aerosol glue that is repositional if necessary. and another one that is instantly permanent. Allene's glues are available at like WalMart and other craft outlets.
