We run a public riding center, we offer summer horse camps and riding lessons, wagon and carriage rides and pony rides. I need ideas to expand...thinking of things like "parents night off/kids sleepover at the barn"...

WOW that sounds like great fun. How about own a horse/pony day. Every body gets to care for and ride their horse. At the end of the day you could hold a competition for things like best looked after horse, best cleaned tack, that kind of thing. Give out prizes and certificates to every body.
the answer above is great, a fun show is a good idea. have the kids come for a week (like a camp, from 9 am until 5 pm) and meet the horse that they will be riding. have them practice things like the obstacle course that they will be doing and braiding there horse and stuff.
you could also have a "pretty little pony" contest and have kids braid the ponies and put ribbon in there tail, glitter there hooves etc
Have a fun show. Let the kids at the camp decorate stalls or paddocks, dress up in a horse / rider costume contest, have a talent show with the horses, but not doing typical riding contests.
A sleepover would be cool, but it's hard to have a "lock in" without a few chaperone's...be prepared.
