Does anyone have any recipe suggestions or food ideas for a truck driver?
My husband is going OTR for about a month and I realize I can't pack him enough food for that amount of time but to save us some money I would like to pack him enough for 1-2 weeks of breakfast and/or lunches. He is taking a small cooler and a lunchbox stove. Any easy recipes or breakfast/lunch ideas would be helpful.

what about those packets of salmon and tuna that starkist makes or canned chicken? you can get some of those and possibly a small jar of mayo or salad dressing for him to make some sandwiches/wraps or a small meal. instant potatoes for mashed potatoes.
Make breakfast casseroles. These keep great in the fridge and make a good amount of servings. You can vary the recipe any number of ways, but the basics are (and measurements are approximations because I always just throw it together):
8-10 large eggs, beaten 3 -4 cups shreded potatoes (you can use thawed frozen hashbrowns if you like) 1 onion, finely chopped 1/2 packet Hidden Valley Ranch Dressing mix 1 cup any combo pre-cooked meat - sausage, bacon, ham 1 cup any combo veggies - mushroom, green pepper, broccoli, etc 6-8 slices American cheese
Pre-heat oven to 350 and grease a 13x9 pan. Spread potatoes in bottom of dish, sprinkle w/Hidden Valley Ranch mix. Sprinkle onions & meat/veggies evenly over potato layer. Pour eggs evenly over the top and cook for 25 minutes. Add American cheese slices over the top and cook for an additional 5-10 minutes or until melted and bubbly.
