I'm a caterer who love some input on an Asian & American Fusion menu for 09' wedding?

The bride's side adventurous eaters and the couple loves Asian cuisine and are also vegetarian. The groom's side classic meat and potato folks. The couple is willing to include meat such as chicken in their menu. In the past we've taken one ingredient such as pasta and made Italian Lemon pasta salad with artichoke hearts, red peppers and scallions and then used glass noodles for a mango, cilantro, mint and green bean "pasta" salad. or if we purchased shrimp we'd also make that two ways. Appetizers were there are small bites is proabably where we can get the most adventurous. Items like shrimp or meatballs that are seasoned simply can have a variety of sauces.

Google for the Silverado Country Club in Napa, California. Look at his menu. The chef is still I believe Peter Pahk. He does American-Asian fusion and has won awards. Check out Silverado's menu for some ideas.
