Freezing crab cakes?
I want to make crab cakes and freeze them. Do I cook them before freezing? Do I let them defrost before cooking?

Do not cook them before freezing. After shaping them put them on wax paper, cover and freeze. Then you may handle them to store in the freezer the way you want them. When you are ready to cook them take out as many as you want to cook and put them in the refrigerator that morning to thaw. This will help them to keep there shape while cooking. Always cook them when they are cold, but not frozen.

No dont cook before freezing they will come out better that way. And yes let them defrost. It will cook wrong if you cook it frozen. Some places will be more cooked then other, It will be uneven.

The crab is already cooked when you get it, so you can freeze them once you have them assembled. The can be cooked from frozen or thawed, whichever you prefer. They will cook more quickly thawed.
