including Porgy and Bess? Do singers who sing these pieces or roles find themselves typecasted? Are some of the works too simplistic to be considered classical music?

just as Joplin has been adopted (sort of) as classical music so should these spirituals ...... besides even the music publishers consider them as classical

Of course classical. More art song genre than anything else.  Porgy and Bess?! Opera. Typecasted, sometimes.  Too simplistic - not at all.  There are much simpler and more complex classical music out there that we have categorized as traditional classical music.  Have you seen the "24 Italian Art songs" compilation?  Well then that says it all.
