Knowledge by familiarity the only way. Get some antique buyers guides (library) they print them annually you'll start to know some of the better makers or even prowl Ebay. But there can be huge differences due to rarity, factory or designer. Some famous names Meissen (crossed swords mark in blue on base) Doulton (usually marked) Shelley, Worcester, Sevre are all highly sought after. Then there is Asian ceramics from many countries that are very valuable too.
