Freeze raw horseradish?

My neighbor gave me a horseradish root and I am not sure how I can preserve it. I have read in my Joy of Cooking cookbook and all it talks about is pretty much pickling it in vinegar. Does that take away from the actual raw horseradish taste? I was thinking of cutting it up into medalions and freezing them, so that when I am ready, I can shred those to make sauce. What do you think?

Blend it down into a rough paste in your blender, then freeze it in ice cube trays, you can then pop two or three out a time when you need them for sauce.

The purpose of the vinegar is to stop the horseradish from turning. It's harder to shred a frozen & then defrosted piece of horseradish, so shred it or make your preparation and THEN freeze. I use ice cube trays.

You can also make a wonderfully flavored oil for stir fry, saute, or other cooking applications by taking 1 T grated horseradish and putting it in 1/4 C olive oil. This lasts about 6 months.

freezing will probably work. it works for just about everything else.
