How could I likely duplicate this yellow ham fried rice?

This Chinese restaurant that is located entirely too far away for me to get to often has a wonderful ham fried rice. It's yellow, and I know it has onions and green onions in it, and small pieces of diced ham. It has a great smokey taste to it. I've never tasted anything like it anywhere else. Any ideas?

How did chicken come into this? It's ham fried rice, and tastes nothing like chicken.

chicken base is causing the color to be yellow.it is common for restaurants to prepare rice with this.

Hi Ferret, they all have tricks up their sleeves to out do the next guy. My guy just before the end of the steaming or boiling process of the rice,he adds a little saffron. The smokey taste comes from the ingredients. A little thing I have noticed is the chicken is smoked, the Chicken stock is made from the bones and bits from the smoked chicken. Every time I go into the kitchen of this particular restaurant, they never seem to cease in confusing me.
