How do I keep my apple from turning brown after I've sliced it?

Any scientific explanation about why it happens would be cool, too.

So does the whole lemon juice thing compromise the 'apple taste'?

Sliced apples turn brown with exposure to air. This is called oxidizing and it is sort of like iron rusting.

To stop the apple from browning, you need to prevent it from touching air. Storing it in an airtight container will help, or covering it tightly in plastic wrap. As a temporary measure, rubbing lemon juice on the cut parts will help change the chemical balance of the apple and slow down the oxidization.

Dipping it in caramel or chocolate works, too!
