Recipes to use leftover mashed potatos?

My husband and I made a ton more mashed potatoes in comparison to anything else, and there's a lot leftover. I hate for them to go to waste, so does anyone have any recipes where I can use them up?

I already have a recipe for potato pancakes, so no needs for that recipe.

german potato candy

1 mediuam potato
2 bags/boxes confectionary sugar (powdered sugar)
peanut butter (smooth, not crunchy)

Peel the potato and slice into one inch cubes, or so. Boil the potato cubes until you are able to stick a fork in each piece, lift it out of the pot, and the potato slides easily off the fork.

After that, drain the water, and mash the potato in a large bowl. start adding the confectionary sugar once the potato is mashed. it will get VERY watery at first, so use a spoon, but after a while, the dough will harden up as the sugar saturates it. You'll have to use your hands to knead the dough after about 1 bag of sugar. Keep adding sugar until the dough won't take any more. Then dust the countertop or cutting board with more powdered sugar, and roll out the dough to about 1/4 inch thick. I usually have to throw some more sugar on the dough every so often (use it instead of flour), so it doesn't stick to the rolling pin. Spread a good layer of peanut butter on it, and carefully roll it back up. Chill the roll in the fridge for about an hour, take it out, and slice it so that each piece is about 1/4 to 1/2 inch thick.

A tip: don't skimp on the peanut butter. If you don't have enough, the candy will just be too sweet to be edible. Also, be sure to mash the potato cubes very well at the beginning.....it doesn't taste right if you end up eating chunks of potato in the finished candy.

Pat dressing into a pie dish, cut turkey into small pieces place on top of dressing. Pile mashed potatoes on top and put a little cheese on top. Bake at 350 till warmed through.

TURKEY CROQUETTES
This is more of a method than a recipe, so feel free to add or adapt in whatever way you please!

1 cup cooked turkey, ground
1 cup leftover mashed potatoes
1/2 cup leftover cold gravy
Salt & Pepper to taste
dry breadcrumbs
vegetable oil

In a bowl, combine the turkey, potatoes and gravy, mixing well. Add salt and pepper if needed. Mixture should stick together; if necessary, add more gravy.
Form oblong croquettes, using about 1/3 cup of the mixture for each. Gently roll the croquettes in bread crumbs to coat, then place formed croquettes on a plate. Refrigerate 1/2 hour to allow them to get firm.
In a large (preferably non-stick)skillet, heat about 1/4 inch of vegetable oil to almost smoking. Gently place croquettes in pan, being careful to avoid overcrowding. When croquettes are golden on one side, gently turn and finish browning.
Remove to a paper towel lined plate before serving.
Makes 6-7 croquettes.
NOTE: If you wish, a food processor can be used to make this recipe and speed up prep time

TURKEY BURRITO OR TURKEY SOUP
Put into crock pot:

3 C each turkey, cooked, prepared stuffing, mashed potatoes, gravy & broth.
1 onion, cut as you please.

May serve in bowls with rolls or in a tortilla. Optionally add cheese.

BAKED MASHED POTATOES
6-7 large potatoes
1/2 lb mozzarella, cubed
3 TB grated romano cheese
1/8 lb hard salami, minced
1 stick butter= 1/2 C divided
1/2 cup milk
1/2 cup breadcrumbs
Salt and pepper

Peel the potatoes and cut into 1" chunks. Boil until tender and drain. Mash potatoes and add 6 TBS of the butter and then the milk. Stir and whip until potatoes are smooth.

Add mozzarella, romano cheese and salami. Stir to blend. Add salt and pepper to taste.

Use 1 TB of the remaining butter to grease the bottom and sides of a high-sided casserole dish. Coat the bottom and sides with breadcrumbs. Spoon potato mixture into the dish and dot the top with the butter.

Bake at 350° until the top is golden brown. Be careful -- this dish is VERY hot when it comes out of the oven!


Potato Balls

2 C very stiff mashed potoatoes (leftovers)
1 to 1 1/2 C finely chopped fully cooked ham (or chicken, turkey, tuna, ground up hotdogs, etc)
1 C (4oz) shredded cheese
1/3 C mayo
1 egg, beaten
1 ts prepared mustard
1/4 ts pepper
2-4 TB all purpose flour
1 3/4 C (approx) crushed cornflakes

Combine all except cornflakes, adding enough flour to make a stiff mixture. Chill in fridge at least a half of an hour.

Shape into balls & roll in cornflakes. Place on a greased baking sheet & bake at 350 F for about 25-30 minutes. Serve hot. BEST right out of the oven, not so good leftover. (even if just 5 hours leftover)

This is a very forgiving recipe, skip the egg, add less meat, add more flour, etc. DO NOT SKIP THE MAYO!
They are devoured at my home! Enjoy!


Leftover mashed potato balls
2 C cold mashed taters
1 egg yolk
½ C butter
Mix cold mashed potato with the beaten egg yolk.
Mix in salt and pepper to taste.
Shape mixture into 1 inch balls.
Place the balls in a greased baking dish.
Make a depression on the top of each, putting a little bit of butter in each depression.
You do not have to use the whole stick of butter.
Brown in a 400°F oven for 15 to 20 minutes.

Leftover Mashed Potato Roll Ups -
Seasoning salt
Chives
S&P

Let your leftover mashed potatoes cool, then roll into small balls about the size of a quarter, sprinkle the outside with seasonings of your choice. Place on baking sheet sprayed with cooking oil.
Bake 325 degrees for about 25 minutes or until golden brown. Can use sides of ranch dressing or sour cream to go with them! You can be as creative as you want-

I like to use melted butter in the center with garlic powder & some herb of your choice

Boxty
1lb Potatoes 8oz Flour
1 Egg Milk

Grate ½ of the potatoes, cook & mash the rest of the potatoes
Stir in the flour and season
Beat in the egg add enough milk to form a batter that will drop off the spoon
Drop spoonfuls onto a hot frying pan
Cook for 3-4 mins on each side

Champ
3lbs Potatoes
½lb Cabbage
1 bunch Spring Onions
3½floz Milk

Boil & mash the potatoes, cook the chopped cabbage
Chop the onion, Place in a pot with the milk & bring to the boil
Simmer for 5 mins
Mix the potato & cabbage with the milk

Colcannon Cakes
1lbs Potatoes
¾ oz Butter
6oz Cabbage
1 Egg beaten
1 bunch Spring Onions
3 tbsp Flour

Boil & mash the potatoes, chop & cook cabbage until tender
Mix the cabbage with the potatoes and the egg
Chop the onion, stir into potato mix & season
Shape into cakes and dust with flour and fry until golden

Potato Scones
¼ cup butter
6-8oz SR Flour
½ tsp salt
3 cups freshly mashed potatoes (with milk)

Cut butter into flour until it forms large granules.
Add salt and, mix well. Mix in potatoes.
Knead for a few minutes. Roll out onto lightly floured board with floured rolling pin.
Cut into 2 rounds. Cook on a dry griddle or skillet until brown on both sides.

Shepard's pie! It is really simple, quick and can have anything in it. For my family Shepard's pie had ground beef & onions, corn, green beans and of course mash potatoes. Ground beef & mash potatoes are standard but any vegetables will do. Cook ground beef goes in the bottom of a casserole dish and the vegetables are layered on top. Mash potatoes are used to cover the whole dish with a thick layer of mash potatoes to seal it. Bake at 350 for about 30 mins or until the top starts to brown.

Fish Cakes.
2C. Cooked fish. (flaked)
1C. Potatoes. (mashed)
1. Egg. (whisked)
1/8. Pepper.
1. Onion. (diced)
Combine and mash all ingredients together in a mixing bowl.
Salt to taste.
Shape into cakes and fry slowly in small amount of hot fat.
Good served with tomato or cheese sauce.

You could use turkey leftovers for the cakes or croquettes.

ez sheppards pie: 1lb ground beef cooked and crumbled 1 can of corn 1 can cream of mushroom soup salt and pepper to taste 1 cup of sharp chedder cheese shredded green onions sliced mix mushroom soup salt and pepper to cooked beef and place in a 9X9 glass baking dish. Open corn and drain off water and cover meat. Then mix mashed potatos cheese and green onions and cover corn. Put in oven @ 350 for about 30 -40 min. untill hot
