Meatloaf, mashed potatoes, corn and green beans
Roasted chicken, roasted potatoes and carrots and onions, creamed peas
Spaghetti, salad and garlic bread

Baked salmon, baked sweet potato, tossed salad. Delicious, nutritious, & very easy.
Go to your nearest deli or grocery that has fish, ask for a pound of salmon from the thick end, buy a sweet potato for each person, (I'm assuming we're planning for 2 people), & salad greens. Scrub the 2 potatoes, prick w/fork or knife, wrap in plastic wrap, bake each one in microwave for 6-10 minutes depending on size. Season salmon with your favorite seasoning (or make a paste w/brown sugar/vinegar/soy sauce or some such thing that you like the flavors of), spread on salmon. Preheat toaster oven to high & bake 8-15 minutes depending on how done you like it. While it's cooking you mix together the salad greens. Cut open & butter your sweet potato & cut salmon in 2 & lay a piece on top of each mashed sweet potato, serve with salad while all is steaming hot.
