Blackjack fans, I'm planning to spend a week in Vegas just playing blackjack and seeing shows and dining?
My question is: If you are also a serious blackjack player what is your favorite spot to play. I usually try to go where they don't have too many decks in the shoe and they don't watch you like a hawk. So what is your favorite place and/or places for blackjack. Thanks for the help.

Are you kidding. Every casino in Vegas will watch you like a hawk around the Blackjack table. Don't take it personal, they are also watching the dealer like a hawk.
The best places to play single deck, low limit Blackjack in Las Vegas are Four Queens, El Cortez, Gold Spike, Fiesta Rancho, Las Vegas Club, Sahara, Golden Nugget. http://www.lasvegas-how-to.com/blackjack.php
I haven't played in awhile but I've read that some strip casinos are revising the rules to tilt more in their favor. Instead of paying 3 to 2 on a blackjack they're paying 6 to 5 or something. I forget the exact number but it seriously impacts your ability to have a winning session. So as you said you want to find places that don't use too many decks... I'd check out the Fremont Street area - Gold Spike, El Cortez... and off strip at places like Arizona Charlies, Boulder Station, and whatever "locals" casinos you can find off the strip. Ideally you'd find a single deck game. Do some Google searches for terms like SINGLE DECK BLACKJACK LAS VEGAS and you'll probably find some online forum or web site telling you where single deck and double deck games can be found.
All casinos have the "eye in the sky" constantly watching so if you're counting cards you just have to learn how to not look like you're counting cards.
Counting cards is completely legal of course but the casinos don't like it since it increases your odds of winning.
Las Vegas is the most interesting and enjoyable town in the world and with hotelbye you will see out more. Nowhere otherwise on the planet you may find a city that has all of the journey amenities that just a total resort destination will offer: magnificent casino lodges, great food, great stay amusement and state-of-the artwork conference and deal display facilities. Las Vegas is definitely a spectacular city and exactly what you'd assume from a world-class town, and more, is the following for the travel pleasure. One of the areas you should visit in Las Vegas may be the Fremont Street, a pedestrian area with all sorts of unique sites.
