What is meant by broiling?
I've been given a recipe book that comes from the USA. A lot of the recipes talk about "broiling". What exactly is "broiling"? Do they mean grilling or is it roasting?

It is what the rest of the world calls grilling. Direct heat from above.
What we call roasting, they call baking and don't appear to distinguish between the what we call baking.

broiling is done using the bottom part of your oven. It is not by using water, just season your food with a little water in the pan and put it in the bottom part of your oven. I broil all the time. In fact i just finished broiling some turkey wings. The fire goes directly to the meat, and most meats only take 10 minutes on each side and they come out very good. For your first time though, put the Temperature on low and turn every 10 minutes until you are satisfied with it. You have to watch your food though, cause like i said it cooks very fast and you have to keep turning it. May God Bless you in all you do!!!!!!!

It is direct intense heat. Generally placing the meat in the oven only 5 to 8 inches from the heat source in the oven. The oven is typically set on it's highest setting - and cooking one side and then turning it and cooking the other side. It is good for cooking the outsides of meat quickly so that the inside stays rare to medium rare. You have to watch closely when you are broiling something so that is does not burn.
Pan broiling would be done on top of the stove - quickly searing one side and turning and searing the other side on a high heat.

If you say char broiled it refers to grilling like on the bar b q and with restaurants they have a broiler which is a grate over the open flame. If it is refering to just broiling that is usually done in the oven by putting the rack near the top shelf and the setting only heats from the top burners. It's used to sear in the juices in meats and fish.

It's like grilling, except heat is applied from above as well as below. Most ovens will have a special "broil" setting.
