More often it is serve with cold food and roast beef, but I have made white sauce/bechemel and add it for serving warm with boiled beef or brisket, even in salads lie Swedish potato salad,I made a herb and butter sauce for fish once with it and used the prepared stuff, jarred is not made with sour cream, some add it to mellow the flavour out, even have used it in the sauce for braised short ribs.

The best think about horseradish sauce is the fresh pungency of the horseradish root. When it is heated you loose that pungency. Usually it is made with sour cream and sour cream has a tendency to curdle when heated.
