im looking for the traditional spaghetti recipe?

some friends , italians , said that what we call spaghetti is an american recipe, they made some and all i can remember was she fried bacon to crumble and she used the grease and an egg it seems like she mixed that with the noodles, im sure there is more to it she said that was the way they fixed it in italy, anyone know what im talking about i would love to find the recipe

Sounds like Spaghetti alla Carbonara! Here's how to make it:

AUTHENTIC SPAGHETTI ALLA CARBONARA
x 4 servings

diced Pork Cheek (traditional) or Bacon (can also do if you don't find pork cheek)
400 grams of pasta (choose DeCecco or Barilla)
4 egg yolks
1 whole egg
100 grams Roman Pecorino cheese, thinly grated
freshly, thickly grinded black pepper
extra virgin olive oil

Brake the 4 egg yolks and the whole egg together in a bowl with a pinch of salt. Add the black pepper (a good amount), 1/3 of the Roman Pecorino and stir well. Fry the pork cheek/bacon in a little extra virgin olive oil.
Cook the pasta in a LOT of SALTED water (7grams = 1 tea spoon of salt each 1 litre of water). Pasta has to float freely or it won't cook evenly. Be very careful not to overcook. Drain the pasta thoroughly, put it in the bowl with the egg sauce and add the pork cheek. Stir well and serve with a good sprinkle of freshly, thickly grinded black pepper. The rest of the grated Roman Pecorino cheese should be available for your guests to add freely according to taste.

The rule for the egg quantity is 1 yolk per person + 1 whole egg each 4 persons. If you're making it for less than 4 persons use 1 yolk per person + 1 whole egg, and add more Roman Pecorino cheese.

Authentic Spaghetti alla Carbonara are NEVER to be made with cream, and fettuccine Alfredo are not a famous italian traditional dish (or at least, not famous in Italy).

I don't recommend using fresh tomatoes in spaghetti sauce. They really don't have much flavor, and by the time you cook them down, there's not much left. Use canned tomatoes instead. That's what they do it Italy, and they ought to know... As for a recipe, saute some garlic and onions in olive oil until they're well cooked. Then chop up the tomatoes, put it all in a big pot and cook over low heat for an hour or more. For meat sauce, saute some Italian sausage, ground pork or ground beef in another pan and add it to the sauce after the first half hour. Salt and pepper to taste when you're done.

they made fresh noodles... you use eggs to make noodles.

I think they just made a spaghetti bolognese you can probably find a recipe for traditional bolognese anywhere, yeah our spaghetti is an american food as italians wouldn't really pair thin noodles with hearty sauces.
