What do i use for a gap between the wall/tile and the tub in the bathroom?

When you step into the tub it lowers from about 1/4" to about 1/2" gap. It is a wooden floor (mobile home.) I have tried caulk and silicone it separates when you step in the tub. I have also tried a mold/trim that you stick to where the wall meets the tub and that falls off as well.

If you have a quarter inch of movement every time you jump in the bath then your tub needs stronger support on the floor area it stands on, no amount of sanitary silicone will last if it is being stretched that distance. Check you haven't got a bigger problem like rotting floor timbers, mobile homes are only made from impregnated chip boarding which breaks down in time with moisture ingress.

Fill the tub 3/4 full, silicone, then stick trim to silicone! You`ll have to leave water in overnight to let this dry.

you need to brace under the tub itself your 1/4 gap should stay the same with you or water in it

Fix the floor under the tub, it should not move.
