Hey, I went to the USDA's Ag Statistics Service "http://www.nass.usda.gov/QuickStats/PullData_US.jsp" and pulled up "all cattle" numbers and then subtracted dairy cows that have calved and dairy replacement heifers and it said that in 2009 there were then 4,102,000 hd in Missouri, also it might be added that that MO ranks # 3 now in terms of number of beef cows (behind # 1 TX & # 2 OK), and also according to one of our guest lectureres in one of my animal science classes somewhere around 35% of the nations beef cow herd is located in SW Missouri.
You must have an online class at meramec. I got my answer to this question from Missouriruralist.com Hope that helps. It's not completely current but the best I could find
