Tonight my daughter her cousin and myself, (they are 12 and 14) are going to make some homemade bread and homemade ravioli and a homemade light strawberry desert dish. There will be an assortment of ravioli fillings; crab and cream cheese, cheese, ground beef, italian sausage, and probably a spinach. we are making it all tonight and cooking/serving it tomorrow, so it needs to be something either quick and easy or that can be refrigerated after prep and before cooking... also I am looking for something a little more inventive than salad please. Thanks!!

I have a great one for ya....Insalata Caprese or Caprese salad. its simple. slice roma tomatoes about 1/4" thick, and get some good SOFT mozzarella. not the kind that is sealed in plastic. this comes in liquid, if it is in plastic and has liquid in the package it will be good. dont get the dried stuff....yich!
slice the mozzarella to the same thickness, now you have matching slices.
chiffonade some basil...lots....roll the basil leaves together like a cigar and slice into thin strips.
place some good fruity olive oil on a plate and alternate the slices of tomato and cheese in a nice display...you can do this on individual salad plates or one serving plate. then drizzle more olive oil, salt and pepper, and the basil. cover til dinner in the fridge.
for some extra flavor you can add some good balsamic vinegar on one side.
this is a classic salad. its light, and some good crusty italian bread is great for dipping in the olive oil and balsamic.

I would hate to see you get rid of your daughter over a small thing like tomatoes. haha
sure....you could roast eggplant, sautee some zucchini, you could use cucumber, jicama....take your pick. just be sure it is chilled before you assemble the salad. you could also make some garlic toast point with some tomato sauce or sauteed diced tomatoes on them...i would not chill these though just the tomatoes.
now I know some traditionalists are reading this and getting ready to blast me...but kids like what they like. adapting a good idea is part of feeding them. im so glad my dog cant talk or we would be making five different meals everytime we eat...

I don't usually serve any side with ravioli. You already have a heavy starch with the pasta dough (not to mention the bread), protein (with the fillings), and vegetables (with the sauce and spinach). Plus you have dessert. Another dish is really too much, in my opinion.
