Advice for finding a summer job?

I would like to find a job in a vet clinic over summer for 2 months (December/January). I've decided to start getting organised early and send out my CV/Resume to clinics. I have had experience working in vet clinics and am currently studying Veterinary technology (which is a new degree in New Zealand), by summer I would have completed all the vet nursing papers and would be about to do a nursing job or at least an assistants job.

How early do you think I should send out my resume?
Also, what extra things should I say in a cover letter?

Thanks for advice.

They like to hear that you are going to school, they like to hear that you want to be a professional.
We like flexibility with scheduling.
I would also remind you of the sometimes very gross things that can be in vet med......lots of poop at the very least.
