I'm looking for a fudge icing recipe that someone has tried that doesn't come out as a glaze. I have one that comes out as a glaze and while it tastes good, I'm looking to make cupcakes with both vanilla and chocolate fudge frosting. Because of this, I'd like the chocolate fudge icing to be able to be piled high, like the vanilla. I've searched the web but none tell me exactly how the recipe will turn out and that's what I'm looking for.

Chocolate Buttercream Frosting
1/2 cup butter, softened 2/3 cup cocoa powder ½ tsp. instant coffee granules 2 teaspoon vanilla 3 cups confectioners' sugar 6-8 tablespoons water, depending upon thickness you want
With electric mixer on high, beat butter until fluffy. Beat in cocoa powder, doffee, and vanilla on low. Gradually beat in confectioners' sugar, alternating with water, until desired thickness is achieved. For thinner frosting use more water. For thicker frosting, use less water.
If you are looking for an icing which is "fudgy" and not a buttercream...this recipe is great....
Fudge Icing...never hardens stays creamy and fudgey
1 cup granulated sugar 3-4 sq. chocolate 1 egg (unbeaten) 1 tsp. vanilla 2 T. butter 1/4 t. salt 2 cups milk Put sugar, egg and 1/4 c. milk and beat until well blended. Add chocolate, butter and rest of milk. Cook until dark and thick. Add vanilla and cool to spread. Never hardens.
If you are looking for a lighter, fluffier icing...then you need to go with a buttercream icing.
CHOCOLATE BUTTERCREAM ICING 2c. butter 1/2tbsp vanilla 1 c. dark cocoa powder 2 lb powdered sugar Hershey's extra dark syrup- to thin icing- I never measure this-so I can't give an exact measure- maybe 1/4 c??? Don't add too much or the icing will be too thin and slide off cake (had this happen a couple of times) 2-3 tbsp milk to finish thinning
Here is an old one that always works well with cupcakes . This is the one my mother used when I was a kid for piling chocolate on a cupcake .
German Sweet Chocolate Frosting
1/3 c. butter 1/3 c. milk 8 oz. german sweet chocolate 1 lb. 10x sugar 2 egg yolks 1 tsp. vanilla Heat butter , milk and chocolate over low heat until chocolate melts ; stir constantly . Remove from heat . Blend in sugar gradually ; beat until smooth . Add yolks , one at a time , beating well ; add vanilla . Allow to cool slightly before frosting .
