Herbaceous Hummus Sandwich
Ingredients:
2 slices sprouted grain bread (I use Ezekiel)
1/4 cup hummus (I like jalapeno hummus)
1 handful spinach
6 thin slices green pepper
2 tablespoons chopped onion
1 slice tomato
Other vegetables, as desired
Directions:
Here is my recipe for jalapeno hummus
1) Toast the bread and then slather the hummus on both slices of bread.
2) Pile on the green pepper, tomato, spinach, onion, and any other vegetable you have lying around.
3) Smack both sides together and cut in half if you like. Eat it!
Makes: 1 sandwich, Preparation time: 2 minutes

I also love to make a good vegetarian chili recipe. You could then freeze it in portion sizes for future meals for when you are really busy or tired.
