Why is missionary the only position excepted by the catholic church?

1.) I think you mean "accepted", with an "A" not an "E"

2.) I think that is a myth. I have no knowledge of that being an official Church teaching. If it ever has been a teaching, or a strong suggestion, I suspect that it has to do with the prohibition against using a spouse as a mere object of sexual pleasure. The "missionary position" is viewed by most people as the simplest way of engaging in marital relations. As such, it is presumed by most people to be a sure way of not using the other person as a mere object of selfish sexual pleasure. The presumption, in my opinion, is not reasonable. A person can be treated as a mere sexual object regardless of the position.

Sexual positions seem to me not to be the primary concern. Mutual genuine love and concern for each other is the primary matter between spouses while enjoying marital relations. Any act that is intended artificially to frustrate the opportunity to create new life is a serious sin. In my opinion, foreplay should be mutually agreed upon, respectful of each others' bodies, and should lead to healthy and loving normal spousal relations. To use any part of another person's body essentially to masturbate oneself is, in my opinion, a serious sin and gravely contrary to the respect that rightly exists between spouses.

Anyone who thinks the Catholic Church is against sex in general is severely mistaken. The Catholic Church advocates large families, and we Catholics certainly know how babies are made. Sex is reserved to married persons, and needs to be open to the creation of new life. That does not mean that only fertile couples can enjoy marital relations. Infertile couples can enjoy the fullness of married life. That includes young couples who for natural reasons never were fertile, and it includes older couples who no longer are fertile.

That's not true. All sexual positions, as long as they can result in a life being created, are allowed. In other words, as long as the penis is inserted in the vagina, it's acceptable.

I'm not Catholic, but I do know that much.

There is nothing to explain as there is no such "embargo" of sex positions by the Catholic Church!
