I am wondering if I could drop an object in the ocean and measure the time it takes to reach the bottom. Are there any transmitters that can withstand excessive amounts of pressure miles below sea level? Does anyone know actual equipment vendors? or pricing?

The problem is not the transmitter but the frequency you need to use to overcome the attenuation of the ocean. The Navy uses ultra low frequency to transmit to it submerged submarines. This means you need a very long antenna. Like more than a mile long.
There are sensors and transmitters that can be made that will withstand the pressures of the deepest parts of the ocean, but as far as I know they are not commercially available. They are made only under special contract to the military or researchers who use them.
