Using up a glut of chillis . . . .?

I've got a glut of cayenne peppers and Russian Red chillis in my greenhouse at the moment and I'm wondering what I can do with them to avoid wasting them.

I've made pounds and pounds of chilli jam and chilli chutney and I've got enough dried chillis hanging up in my kitchen to stock Tescos! I've given loads away to friends and family as well and I don't think they want any more . . .

Does anyone have any ideas about what else I could do with the overflow? It seems criminal to just throw them on the compost heap.

Get a very dry sherry and load it with chillis - the sherry is then decanted after a few weeks. It is great in cooking, stews, soups etc

Try making chilli oil

Not sure what russian red chili peppers are but check with your local food pantry or soup kitchen and see if you can donate the cayenne & russian peppers. Or call your local battered women's or homeless shelter and ask if they would accept a donation of the peppers. Make sure to let them know if these chilies can be used to cook chili or some other meal. I guess you could also try selling or giving them to a local gourmet store or restaurant.
