I would advise that you stay clear of it. If you were discovered, you would be deported.
Unfortunately, it's a criminal offence for anybody to employ a non EU citizen without a visa. Anybody found out faces a fine or imprisonment. Therefore, the only employers are likely to be unscrupulous characters. You would be placing yourself in their hands. The jobs they would offer would be for no-hopers.
Pubs are unlikely. Landlords would face losing their licences. There are plenty of people available they can legally employ.

chances are good really, just not under the table pay. if you get a job here and its under the table pay, itll be in a bad place. nobody with a decent place with take on somebody and not register their working. the pub owner would lose their license, and maybe their home if they lived above the pub like most do, if they got caught.
if you want to work here, with under the table pay, your best bet is in a pizza shop or something like that.
but to be legal you should apply for a visa.

If you are on a tourist visa you are not allowed to work and could be deported. If you are hoping to get a job without a NI number then you are committing a crime as is the employer.
When you enter the Borders Agency will make sure you have sufficient money to live for the time of your stay without working.
