Assalamu Alaikum,

Rasoolallah SAW used to recite four sets of 2 rakahs each in Tahajjud. He was Hafiz of entire Quran. He recited long surahs like Surah Al-Baqara in one Ayah and then in second Ayahs he read several Ayahs of Quran. Asma binte Abu Bakar reported that we had a rope tied to walls on our right and left. We held that rope with one hand so we do not fall listening Quran behind Rasoolallah SAW.

Off course we do can read as much Quran as Rasoollah SAW did. So recite as much as you can what ever time you have beofre Azaan for Fajr in eight rakahs and then do one rakah of witter. See that end witrer salat before Azaan starts. Prophet SAW some time did only 4 rakahs also. So you can reduce the number of rakahs depending on how much time is left for you.

Tahajjud (Arabic: تهجد‎), also known as the "night prayer" is a voluntary prayer, performed by followers of Islam. It is not one of the five obligatory prayers required of all Muslims, yet still, Islamic prophet, Muhammad sws is recorded as performing it many times and encouraging his companions to offer it for its many rewards and benefits.
Tahajjud Prayer does not entail a specific number of rak`ahs that must be performed, nor is there any maximum limit that may be performed. It would be fulfilled even if one prayed just one rak`ah of Witr after `Isha’.
One should begin with two quick rak`ahs and then one may pray whatever one wishes after that. Aisha(R) said:
When the Prophet prayed during the late-night, he would begin his Prayers with two quick rak`ahs.
