Many times I've used multiple gift cards for a single purchase. I've done that with VISA gift cards and many restaurant gift cards. I've even mixed a VISA and a restaurant gift cards in a single purchase.

You apply the gift cards to your account first, and then place your order. So yes, you can use as many as you have.
