best way to cook boneless skinless chicken breast in oven, without breading it?

Just wondering what is a simple, and easy way to cook chicken breast in the oven.. giving it a little flavor but not breading it?

Any suggestions at all?

We always just season it, sometimes just salt and pepper, but any herb or spice works to. Then we sear it in an ovenproof frying pan with some olive oil, until browned on the outside, usually less than 5 minutes a side. Then put the pan straight into the pre-heated over. I think it is around 15 minutes or so in the oven. When done, let sit for 5-10 minutes before cutting. Awesome.
It sounds similar to what Sue does only we don't add water or onion. I may try her idea too.

@J - I bread all the time, no grease. My newest favorite came from my running magazine. Cut the chicken breast in half, lengthwise, put in a bowl of buttermilk with some hot sauce added and let sit 1-12 hours. Take chicken out of buttermilk and into a bag of seasoned panko crumbs (salt, pepper, cayanne pepper, garlic powder, whatever). Put on a baking tray and put in the fridge for a half hour, then bake. No grease at all. And it is good.

Season the chicken with salt, pepper and paprika. Sauté a cut up onion in an oven proof dish in olive oil and a bit more paprika if you like it. Flash fry the chicken breast with the onion for a couple of minutes to seal in the juices. Remove from heat, add a cup or two of water and add some medium sized pieces of potato. Add some minced garlic on top of the chicken. Cover and bake at 375-400 until chicken is done and potatoes are tender. This is quick, easy and smells heavenly!

i hate all the grease of breading things, too.

for a faux breading, you can roll the chicken breast in sesame seeds and then cook it. they add a great nutty taste to the chicken. otherwise you can marinade the chicken in any kind of vinaigrette you like, or even just a low-sodium soy sauce and that makes for good chicken, too. or bake it and then coat with peanut butter. or bake with marinara sauce and cheese.

You could pour a can of cream of mushroom soup over it in a casserole dish....maybe with some rice, too. That would make it moist.

Or you could coat with olive oil and season with lemon pepper, Mrs. Dash, salt 'n pepper...or your favorite seasoning.

Coat it with Lite Italian Salad dressing and bake it. Very good!
