My favorite bottled Greek Dressings are:
Niki's
Leo's

But, I really like my own:
1 cup olive oil
1 extra large or 2 small lemons, juiced (room temp)
2 to 4 teaspoons dried oregano, according to taste, use 2 to start
3 teaspoons fresh minced garlic
1 teaspoon dried basil
2 tablespoons red wine vinegar
1/2 teaspoon salt (or to taste)
1 teaspoon sugar
1/2 teaspoon fresh ground black pepper (or to taste)
1 or 2 chopped pimento's (optional)
Directions:
Whisk all of the ingredients together. Let chill in fridge to blend flavors. Adjust flavor if need be. I tend to adjust with lemon juice, oregano or black pepper, if need be.

You can basically just use any vinaigrette type dressing (aka "Italian" dressing, or balsamic or other vinaigrette), which is what's used on most "Greek" salads.
You could also add various herbs to that if you want to make it have more Greek flavorings, but not necessary (like mint, more thyme, perhaps oregano, etc), or add more lemon juice.
Or make your own vinaigrette, esp. perhaps with olive oil and lemon juice as your "oil" and "vinegar."

Or you could use another kind of dressing, like something yogurt based, or legume-seed based (tzatziki sauce or tahini sauce, etc).

you could, but may I suggest the sauce that is used for gyros, it is called tzidzki (something like that) so-called cucumber sauce. Or possibly use a good caeser salad dressing, that would be spicy without taking over the dish's flavor. Hey, write back and let us know how it came out!

I like Newman's Own balsamic vinaigrette- it's the olives and feta that make it Greek.
