If you order a fresh turkey from a turkey farm, that would be the best. My sister did that one year, (she lives near a turkey farm) and it was the most delicious moist turkey I've ever eaten.
As far as fresh or frozen, organic or not, I guess I've used them all at one time. I was not happy with the taste of the organic one. I am never sure how old a frozen turkey is, so I usually go with a fresh one. You will need about 15-20 pound turkey for 20 people with leftovers.

Fresh is best...especially if you can go to a farm and get one dispatched and butchered there.
Birds labled 'Fresh' in the grocery store aren't really not/never frozen....it has to do with what temperature they've been kept at.
I prefer poultry as 'free range' (my eggs too), I just think that the diet of the animal you are eating has a definate effect on it's flavor.
10 adults: if you want no/little left-overs, get a 10lb turkey, if you want left overs for later meals get a 12-15lb turkey --->depending on how much left-overs you'd like.

I prefer fake turkey so the turkeys can have a good Thanksgiving too. :-)
