Waiola's and Shimazu's are hands down the best on Oahu. Matsumoto's on the north shore is the most popular but isn't close to the quality of Waiola's or Shimazu's. Matsumoto's is famous for being famous and that's about it. They have a great location on the "famed" north shore and have had great word-of-mouth advertising by tourists who don't know any better. But their ice is shaved unevenly, clumpy, and crunchy. Same with Aoki's. Waiola's and Shimazu's ice is shaved perfectly to where its fluffy and melts in your mouth.

Anyone who says that Matsumoto's has the best shave ice on Oahu (don't know about the neighbor islands) either has no clue what good shave ice is, has never been to Waiola's or Shimazu's, or has had nothing but Matsumoto's. You'll find that mostly tourists love Matsumoto's and not so much the locals who grew up with shave ice their whole lives.

Uncles in Kauai. Man are they great. Chunks of fruit and of course ice cream at the bottom. Jo'Jo's is suppose to be great too, but they were never open when we drove buy, even at 11:30 am and several other times..

Aoki's, Haleiwa town, best is the rootbeer topping with a scoop of vanilla ice cream in the center...I don't recall what they are called, but they are amazing!
