I just had to call my landlord/property manager at my apartment because I had accidentally locked my keys in the apartment. She had mentioned that she was going to call me anyway because it was time for my "recertification", which shows my pay checks, and employment information, which is what I needed in order to stay at my apartment. I didn't get a chance to mention to her that I was recently laid off from my job because I was really caught off guard when she mentioned it to me at all. I'm worried now about this. I have signed up for unemployment, which I am still waiting on, and I have gone on several job interviews so I am trying desperately hard to get into another job again and I don't want to get kicked out of my apartment because I really have no idea where I will go or what I will do. I have enough money saved up to pay my rent when it comes due next month so I am hoping that I can just pay that and be fine with everything for another month. What do you think I should do?

You live in subsidized housing. If you no longer qualify, and you will not with no job, you have to move. They can not let you stay, to do so would be welfare fraud, which is a felony.

I have never heard of 'recertification' for renters.

If you have a current lease, with time left on it... I would assume that you are 'safe' until the lease runs out. Unless, of course there is some sort of clause in the lease that states that you need to keep 'reproving' that you are still with job.

If you're on a month-to-month rental agreement. I'm sorry to say, but with the proper notice (generally 30 days), the landlord will probably have the right to ask you to move.

If you have saved several months rent and know that you can cover it - perhaps discussing your situation with the landlord will help. Maybe you can show her your bank statement, or sign a certification that states that you have that amount of money.
