How to make perfect dough?

I've made cinnamon rolls a few times, but I can never get the dough right. I don't have a bread machine, food processor, or hand mixer so I have to do everything by hand. The recipe I use calls for 2 cups of flour, 1/4 cup of milk, 1 egg, 3 teaspoons of baking powder, 1 tablespoon of sugar, and I like to add 2 tablespoons of sour cream as well. I do the wet and dry ingredients separately, then add the dry ingredients to the wet and combine. Also, I'm not sure whether the liquids should be cold or warm... But whenever I try to work the dough, it's way too sticky to do anything with!!! I always have to add soooo much more flour and it doesn't come out right, and I'm worried I'll overwork the dough and it'll be too tough. Help please?

I do have a whisk by the way. And I just watch this guy prepare pizza dough. He blended his wet ingredients with a bit of flour (and active dry yeast), then added the rest of the flour gradually. Why did he do that, I wonder?
