What are some good potluck dishes to bring to an office potluck at the end of the month?

Our receptionist is retiring and we're having a small party for her. Even though its a good sized office, based on past experience, hardly anyone will bring food. Someone is bringing a bean casserole with turkey and other goodies in it, someone is bringing brownies and someone said they'd bring a fruit salad. I'm thinking about bringing a couple of things, one being a Curry Rice Salad with ham or chicken and I'm not sure what else. I would appreciate any and all ideas! Thanks ahead of time!

Enchilada Lasagna

This whip-up-in-a-jiffy meal can be made with either ground beef or strips of chicken breast. Add enchilada sauce, refried beans, and green chilies, and you’ve taken a traditionally Italian meal and made it Mexican!

Servings: 4 to 6
Preparation Time: 30 minutes
Cooking Time: 40 minutes
Difficulty Level: Easy

Ingredients:
16 oz. refried black beans, 4 oz. diced green chilies, 15 oz. ricotta cheese, 1 egg, 2 teaspoons Mexican seasoning, ½ teaspoon salt, 20 oz. red enchilada sauce, 18 corn tortillas, 11 oz. corn, 12 oz. ground beef (cooked), 3 cups shredded Cheddar cheese (or a mixture of Cheddar, Monterey Jack, and Colby), Sour cream, Green onions (chopped)

Preparation Instructions:
Preheat the oven to 400 degrees F. In a microwave-safe bowl, pour the refried beans and green chilies. Cover and microwave on high for 1 minute. In another bowl, blend together the ricotta, egg, Mexican seasoning, and salt. Spoon ½ cup of the enchilada sauce over the bottom of a 9 x 13 in. baking dish. Lay tortillas over this, overlapping the edges. Spoon half the bean mixture over the tortillas. Spoon half the ricotta mixture over this. Sprinkle with half the corn, half the beef, and1 cup of the cheese. Repeat the layers, then pour another ½ cup of enchilada sauce over the whole, followed by the remaining tortillas. Spread the last of the enchilada sauce over this and sprinkle with the remaining cheese. Cover with foil and bake to 40 to 45 minutes, or until bubbly. Remove from the oven and allow to sit for 5 minutes. Serve with dollops of sour cream and sprinkles of green onions.

It's unfortunate that hardly anyone will voluntarily bring food. Any chance of asking people to bring a pound of cheese with crackers, cold cuts and a loaf of bread, mayo and mustard?
A great crowd pleaser is a giant Subway or Quisnos sandwich (4' or more) I realize it's not home made, but it gives others a chance to contribute - albeit with minimal effort - and it provides a tasty meal with no fuss. Maybe those who don't cook could contribute to the sandwich 'fund' or pick up drinks or chips for the group. Hope you have a great send off for your receptionist!
