What do you do with pico de gallo?

I've just recently discovered the great taste of fresh pico de gallo and am looking for ways to use it. I've had it with sauteed baby spinach and I've had it with beans. How do you incorporate it into your meals? If you will also share your favorite pico de gallo recipe, I'll be grateful.

I've found a great brand of (fresh) pico de gallo** and always keep a tub of it in my freezer (...I could pour it into a ziptop bag and freeze flat so that I could later just break off as much as I need, but most of the time I'm lazy and just freeze the tub then chip off what i need with a short ice pick).

I like to use small amounts of it for things like scrambled eggs (cooked in a bit of oil before adding the beaten eggs) or other egg dishes, on top of cooked chicken or flaky-white fish (perhaps mixed with a bit of sour cream--great combination), mixed into mayo for sandwiches, etc.

I'll also use larger amounts of it for various dips, in burritos and quesadillas, in various green salads (perhaps with chicken and other Mex. flavorings), in Mexican type soups and stews***, mixed with mango chunks and maybe extra cilantro/red onion/etc for mango salsa, over white-flakey fish then just baked in the oven, etc.

We use it on salmon. Just bake the salmon with the pico de gallo on top of it

On top of any mexican style dish.

I also like to mix with sour cream for a chip dip. I also use it in amy gaucamole, then I just add some lime juice, and a little salt and Wala it is done.
