I know there's like hunt seat and show jumping and dressage. But that's it. So, what are some of the different types and what do you do in it.

Endurance- riding for long hours over long distances
Eventing- Combines dressage, cross-country jumping, and show jumping
Horseracing- racing horses. Popular horse race events; triple crown races, belmont stakes, kentucky derby, etc.
Polo- literally playing fast moving field hockey on a galloping horse
Polocrosse- Polocrosse is a team sport that is played all over the world. It is a combination of polo and lacrosse. It is played outside, on a field (the pitch), on horseback. Each rider uses a cane stick to which is attached a racquet head with a loose, thread net, in which the ball is carried. The ball is made of sponge rubber and is approximately four inches across. The objective is to score goals by throwing the ball between the opposing team's goal posts.
Horseball- often compared to "rugby on horseback", it involves two teams of four players each, who pass a ball from rider to rider and attempt to score by throwing the ball through a vertical hoop.
Tentpegging- a combat sport which has evolved from cavalry training drills, it involves a rider at a full gallop, on a timed course, using a lance or sword or other weapon, to hit a course of targets

Cross Country- is a sport for rider and horse, built like an endurance race with jumps, hills, trees, rivers, and other obstacles that you must jump over in a certain order.
Jumper- show jumping based against beating the clock. You get seconds added on with every penalty.
Hunter- show jumping where it's based more on looking pretty than going fast
Equitation- horsemanship. Judging criteria covers the rider's performance and control of the horse, use of riding aids, proper attire, correct form, and usually factor in rider poise and the cleanliness and polish of horse, rider and equipment. The performance of the horse is not judged per se, but a poorly performing horse is considered to reflect the ability of the rider. Equitation classes occur in the Hunt seat, Saddle seat, Dressage, and Western disciplines. A good equitation rider is always in balance with the horse, maintains a correct position in every gait, movement, or over a fence, and possesses a commanding, but relaxed, presence, able to direct the horse with nearly invisible aids.
Steeplechase- racing horses on a track but having hedges to jump over as well
