Pork chop recipe ideas?

I have some nice 1 inch thick pork chops and I'm looking for a tasty, different way of preparing them. Any ideas?
No grilling please (no matter what I do when grilling, they end up hockey pucks!)

We eat a lot of pork chops in my house. There are many things you can do with them aside from grilling. We try to avoid that cooking method as well, because they do get rock hard quite often!

1. Bread and bake the pork chops in the oven. Use the standard egg wash and flour coating. Season your breadcrumbs with Italian seasonings or make a spicy bread crumb mixture used crushed red pepper flakes, Old Bay seasoning, paprika, chili powder, and cumin. Serve the breaded chops with white rice and red beets for a complete dinner.

2. Make stuffed pork chops for dinner. We combine ricotta cheese with spinach and mushrooms. Stuff each pork chops with the cheese mixture or layer it on top of the meat if you can't cut into the center of the pork chop to create a pocket for the filling. Roasted garlic potatoes make a great side or a toss salad would work too.

3. Barbecue pork chops are really good, and you don't need to cook them on the grill. Just throw them into the crock pot or even with barbecue sauce, brown sugar, and sliced onion. It tastes almost the same but involves less work, and the meat will be juicy and tender when it's finished coking. Macaroni and cheese or baked beans make a great "barbecue" side dish. You could also have pasta or potato salad.

4. Pork tacos are really good and a creative dinner idea. Pour salsa and taco seasoning mix over the meat before it cooks in the oven. After you have removed it from the oven, shred the meat and salsa mixture to use as a filling for soft tortilla shells or a taco salad. Include lots of fresh ingredients like lettuce, cheddar cheese, and diced onion. Creamed or buttered sweet corn is a good side.

The quickest and easiest way to make some delicious pork chops: Prep/Cook time: 20 minutes Ingredients: 1 Tablespoon vegetable oil 6 pork chops 1/2" thick 1 medium onion, sliced 1 can (10 3/4 oz.) cream of celery soup 1/2 cup water Directions: 1- Heat oil in skillet. cook chops 10 minutes or until browned. 2- Add onion and cook until tender. 3- Add soup and water. Heat to a boil. cover and cook over low heat 5 minutes or until chops are done.

Chicken and rice Casserole

1 pound boneless chicken breasts (or pork chops)
1 can beef or chicken gravy
1 can beef or chick stock/broth
1 large onion sliced
1 bell pepper sliced (optional)
1 tomato sliced (optional)
1 can sliced mushrooms
2 cups water
1 cup uncooked rice
1 large baking dish sprayed with Pam
Salt & pepper

Preheat oven to 375
Season meat and lightly brown in a pan
Take prepared pan and spread out the uncooked rice
When meat is brown place on top of rice
Pour over gravy and broth
Add onions, bell pepper and tomato slices over each piece of meat
and then pour over the water

Cover with foil and bake for 35 minutes. Remove
foil and bake another 5-10 minutes or until most of the
liquid is absorbed or cook less if you want juicer rice

I like to "Stuff" them with a Stove Top Dressing and baked for 20 mins at 350 degrees. Place a slice half way through the chop, fold back, add the stuffing, and fold back over. Once cooked, let rest for 5 mins, plate and serve with either a Turkey gravy or Brown Gravy on top. Simple and easy. I would recommend a few others but it may be too time comsuming, and for a busy household this works really well on a weeknight.

you can bake them in the oven ....

use a 9x13 pan ... place the chops in the pan, cover with condensed cream of mushroom soup (don't add the water) ... bake at 350 for about 45 minutes ... make some rice and you have moist pork chops and gravy ... Mmmmm ...
