Why do Christians and scholars continue to perform exegesis of the Torah based off of translations?

The Hebrew Canon was written in Hebrew (a few passages in Aramaic) and subsequently translated hundreds of years later. Translations are always imperfect because of unique cultural connotations. Additionally, Hebrew is a multi-dimensional language - I..e. numerical values etc. Why would supposedly scholarly people continue to base their teachings and exegesis based off of imperfect translations?
