What is the correct site to book Eurail passes on?
Eurail or Raileurope? Is there an officail site. Also any advice that may help? I need to travel from Paris to Aix-en Provence (France) and then to Barcelona Spain.

If you only want to travel from Paris to Aix and on to Barcelona you do not want a pass, you will want tickets.
The site of the SNCF is the best for that.
If you can handle it, use the French language version of the site and select to collect your tickets on your Paris departure station.
The seat 61 site has all info needed, click on France in the left bar and read the page it brings you to.
Searches will find you all links you need but you can also use the link in the other answer.

It doesn't matter which site you get the pass from. However, it may well be cheaper to buy individual tickets for your trip rather than a railpass. See: http://www.seat61.com/ . The site has a huge amount of information on train travel and railpasses. It will tell you in detail how to determine whether a railpass is better than individual tickets. You need to know that many high speed, international and night trains require reservations and a supplemental payment when you use a railpass. The site will tell you which railpass (if any) suits your trip best and how to use the pass if you have one.
