Driving from NJ to Bangor, Maine. Will take over 8 hrs. This is not THAT long I know but I'm afraid to book any hotels in Bangor if I feel I can't drive any further than 7 hrs or so. So, should I not book and stay at a hotel/motel when I get to where ever?

well leave a day earlier if you can and drive for about 4 or 5 hours get a motel and stay the night
I used to travel all over with out making reservations when I was just traveling about
as for some yes I book ahead if I plan a longer stay but I plan ahead on how long it will take me to drive to my destination
If its more than 12 hours I leave a day earlier and drive for 6 or 7 hours and get a room

You are talking about 500 miles in one day. So you either need to drive about 65 mph the whole distance or you will have to drive longer than eight hours. If you start early so you avoid rush hour, you should be able to do it in 8 hours.
Eat before you leave, have sodas and snacks in the car and a full tank of gas. When you need gas, pull in, fill up, use the bathroom and get back on the road. What will really turn it into a long trip is frequent stops and a long lunch.
