Find any of the music written by Johann Strauss or his son Johann II. The family's waltzes are considered part of the classical repertory.
There is also a waltz in Berlioz's Symphonie Fantastique (2nd movement).

Ravel: 'Valses nobles et sentimentales'. You get several in a row, in one 'set', here; and some are so slow and poignant and fairly simple, that a 3rd year student could play them.
