Both have about the same amount of fat. If both weigh six pound, they also probably have the same amount of meat.

If they are the same size that amount of waste would be about the same.
But if all parts are used then there is not much waste to either.
Feathers can be used for pillows or bedding.
Feet and other parts not typically considered edible can be used for soup.
Fat rendered from either of the birds can be used in cooking.
Meat from either a very nice dinner.
Carcass of either, the makings of a great soup.

They are very much the same. They are both greasy waterfowl birds and are cooked in very much the same ways.
