Chubs taste the same as white fish and both white fish and chubs inhabit the great lakes. Both fish are processed/smoked in the same manner. The biggest difference is that white fish is a large fish and you can often buy a half fish and chubs are small fish and usually sold whole. The flesh of smoked chubs has about the same consistency as white fish. They are delicious on a bagel or a bialy (my preference) with shmear of cream cheese.

Penny is right Chubs are fresh water herring, in Canada they are plentiful, in Lake Winnipeg in Manitoba they are caught and called Goldeyes, are smoked or dyed to, even smoked carp or eel is nice with a bagel
