1) Three year gap in employment while caring for father at home
2) Some periods of self employment as a consultant but nothing steady.

The stints as a consultant is helpful. It shows you've kept viable and current in your skills. If asked about the intermittent record, just tell them why. If you are sill caring for your dad, you might use some of the time to self train.
